Can on the right is 193-31. Can on the left is identical except that "Fitzgerald's" is in white. I'm thinking the white one is probably earlier than the other can and they eventually ditched the extra color (white) to save money like many brewers seemed to do.
Is this a known variation? How tough is it? Are there matching beer and garryowen ale cans?

Yes, this is a known variation, but I have only seen 2 others and both are in about the same shape as yours. I do not have it. I really don't have any information other than that. I don't believe that the Beer or Garryowen Ale came that way, but I'm always keeping an eye out for it.

Wow! Have never seen this before, or if I had didn't take notice of it. Do similar variations exist for the Burgomaster Beer and Garryowen Ale?

Yes they do I have some pics buried in my hard drive that shows there are 4 different Garryowens and 3 pale ale cans
The burgomeister came in OD but none have the change in color and label design as these do
